Happy Thursday, friends! Thanks for the love on my Goals for 2016 Post! I really will reach all those goals, and I will always be adding more goals! 2016 is going to be a GREAT year!
I did mention in that post that I want to share more food on here, either recipes or just throwing some Diva Approved in again sometimes.
Well, as I said, I am ALL about the simple eats. I am just not a girl who likes to get in the kitchen and do things from scratch. I do hope though that Mike and I start cooking a fun meal together twice a month! Like a new recipe we find and would like to try! A fun date night in idea!
Today I want to share with you a simple lunch I had yesterday, and the wonderful thing is, I can use the main ingredient for other meals!
I loveeeeee Wal-Mart’s chicken, and I plan on buying it once a week to have for myself to meal prep some meals with!
I tore this chicken apart, and put the chicken shreds in a sealed container in the fridge to have for some eats for the week.
My salad yesterday was awesome, and simple!
Besides the chicken, I added some guacamole, corn, broccoli, and spinach for the salad base.
This corn is so YUM, a must try! And, I love the wholly guacamole minis for topping on a salad!
I always have to have crunch in a salad, and these mango chips were PERFECT with the combo!
I don’t know what to call this salad, maybe just a “diva style salad?”
But, it doesn’t need a name, it was delicious and that’s all that matters!
Simple, delicious, and colorful!
I also plan on adding some of the chicken to make a stuffed sweet potato! I will add chicken, corn, guacamole, and cheese in it!
( Love these microwavable sweet potatoes, fyi )
